Skillet Peach Cobbler • Recipe

  • 6 cups sliced fresh peaches
  • 2 1/4 cups sugar, in all
  • 1/4 cup water
  • 1 1/4 cups all-purpose flour, in all
  • 1 pinch each of salt, cinnamon, nutmeg
  • and allspice
  • 2 teaspoons baking powder
  • 3/4 cup milk
  • 1/2 teaspoon salt

Preheat oven to 400°F.

Coat a 10-inch cast iron skillet with cooking spray.

Combine peaches, 1 1/2 cups sugar and water in the skillet. Bring to a rolling boil over medium-high heat.

Reduce heat to a simmer and allow peaches to cook until soft.

In a small bowl, combine 1/4 cup flour, 1/4 cup sugar, salt, cinnamon, nutmeg and allspice.

Pour into peaches and stir until thickened.

Remove from heat and pour the mixture into a 12-inch cast iron skillet.

Set aside to cool.

Combine remaining flour, sugar, baking powder and milk in a bowl. Whisk until well blended. Season with salt.

Pour the batter over the center of the peach mixture.

Bake for 45 minutes or until golden brown.
