MAKES SAUCE FOR 1 DOZEN OYSTERS

1 1/2 tablespoons cracked pepper
2 tablespoons shallots, finely chopped
1/2 cup Champagne vinegar
Mix the pepper and shallots, then pour the Champagne vinegar over the mixture. Run the oysters through it and enjoy!
