Louisiana Pecan Pralines

MAKES 20 PRALINES

  • 1 cup brown sugar
  • 1 cup white sugar
  • 1/2 cup evaporated milk
  • 2 tablespoons salted butter
  • 1/4 teaspoon vanilla
  • 1 cup Louisiana pecan halves

Combine sugars and milk and bring to boil, stirring occasionally. Add butter, pecans, and vanilla and cook until the syrup reaches the soft ball stage (238°F degrees). Cool without disturbing, then re-heat until somewhat thickened, but not until it loses its gloss. Drop by tablespoons onto a well-greased flat surface.

The candy will flatten out into large patties.
